I have a new favourite tomato variety. Principe Borghese, I guess you’d call it a mini roma. I pulled out most of my self seeded cherry tomatoes as they get rather untamed, and planted a few Principe Borghese and I’m so glad I did. It is determinate habit which means it doesn’t want to thug itself all over the garden. It’s just as drought tolerant as my cherry tomatoes too. I’m picking a bowl full every day now and have been giving most of them away, but will make some tomato sauce soon, and chutney.
I’m saving seeds from it if anyone wants to try it

If you want to make tomato paste, blend complete (but cut up) tomatoes (skin, seeds and all) in a blender until it is a fine liquid with lots of entrained air. Boil that. It will need stirring whilst heating. A couple of minutes (IIRC) after reaching boiling temp, it becomes a thick paste.
