In Las Cruces we would often have lunch at our local Lowe’s Hardware store. There was a hotdog cart was outside on weekends. Sauerkraut, green chile, nachos etc.
Excellent food.

The Bunnings sausage is about as close to “street food” as it gets in Australia.

Street food was really taking off in Cruces. One of our neighbours bought a van and had it remodeled for a food van. At the local Farmer’s Market the vans were lined up in one section – almost too many choices. Fish tacos….drool.
