A Guide for foragers” by Alison Pouliot and Tom May. Tom is the mycologist who was brought into the Mushroom Trial. He’s fairly widely published on taxonomy and is the head mycology person at the Melbourne Botanical Gardens. I’ve had intermittent contact with him (not in person, my mentor does know him personally) over the past 20 years since he started Fungimap and I joined quite early on when numbers were small and you tended to know the names of the contributors even if you didn’t know them personally. Tom has helped me with IDs. Alison is also a friend of my mentor. She’s a great writer and photographer. And also extremely knowledgeable. Anyway, the book is quite scientific even though it’s sort of popular science. The section on toxins is very detailed about the types of poisoning and the responsible chemistry.
