The kimchi has gone extremely well though. It has a lovely complex sour flavour already, and the last few days of strong ferment activity has dropped considerably. It is almost ready for the fridge.

Your starter sounds like the attempts I have made to get one going. Every time they look promising and then go weak, and I end up using packet yeast.
I will be at the council nursery volunteer group on Friday, if the sourdough guru comes along I’m going to ask if he will swap some of his starter for some of my coffee plant seedlings. If he will, I can send some starter to you when I send the tomatillo seeds if you would like.Thanks.

I have only made one starter before, and it worked like a dream. For some reason, I stopped making sourdough, and the starter got a mould infection because I forgot to feed it for an awfully long time. In the fridge, the previous starter could go without feeding for at least two months.
